Prairie Meat Loaf
2 Eggs 1/2 cup Ketchup 2 tbsp. Prepared Mustard 3 c Old Fashioned Oats 2 tsp Salt 1 tsp Garlic Powder 1 tsp Dried Basil 1 tsp Dried Thyme 1-1/2 c Beef Broth 1-1/2 c Finely Chopped Onion 1-1/2 c Finely Chopped Celery 1-1/2 c Shredded Cheddar Cheese, divided 4 lb. Lean Ground Beef |
In a large bowl, beat eggs. Stir in ketchup, mustard, oats, salt, garlic powder, thyme, and basil. In small saucepan, bring broth to a boil, add to oat mix and mix well. Stir in onion, celery and 2 cups cheese. Add beef, mix well. Press into 2 ungreased 9x5x3 loaf pans. Bake at 375 degrees for 1-1/4 hrs or until meat thermometer reads 170 degrees and juices run clear. Drain. Sprinkle with remaining cheese, let stand until melted. |
